After the craze that was Thanksgiving, aren’t we all thankful for a rainy, lazy day?
To me, that means comfort food and a chance to cook the easiest, most filling, warm-you-up-from-the-inside lunch.
This is a combine and stir kind of day after all.
What you’ll need:
1 14.5 oz can cannellini beans, drained
2 14.5 oz cans diced or whole tomatoes (reduced salt if you can)
6 small sage leaves, sliced thin
pepper
*You can add salt to this recipe. I find, even the reduced sodium canned tomato products have enough salt for me. I like the snap of added pepper instead. But your call!
- In a medium saucepan combine beans, tomatoes, sage and some pepper
- Bring to a boil, and quickly reduce to a simmer
- Serve with fresh-cracked pepper on top, and a sliver – or shavings – of parmesan cheese
Give yourself 15 minutes plus cleanup for this one. Sidenote – this reheats easily in the microwave, so, for me, it’s a great (cheap) meal to take into work.
